I love chocolate! However, I needed to ditch the cocoa as it makes my pinched nerves in my neck go crazy with pain so I found a healthy substitute and modified this fun recipe with carob powder. Carob is available at your local health food store. The primary benefit of carob as a healthy substitute to chocolate is that it contains no caffeine and has a lot of fiber, antioxidants, low fat and low sugar.

You will need-
1 cup walnuts
½ cup oats
1 ½ cup dates-about 20 dates
2 tablespoons carob powder
Dash of sea salt and vanilla

Mix the dry ingredients-walnuts, oats and carob in a food processor until they become like a rough flour mix. Add the dates, salt, vanilla and mix until everything sticks together. If the mix is still too dry add a tablespoon melted/liquid coconut oil or a few more dates. You want to be able to press the mix into small balls in your hand. After you roll into balls, you may want to roll the balls in separate coatings of coconut, chia seeds, hemp seeds or carob powder for additional flavor and display! I place in a sealed container in my refrigerator and when I need my chocolate fix I grab a carob walnut date ball instead! Yummm~
